Chop 3 stalks of celery, 1 apple, 3-4 green onions, ½ C of pecans
1 Rotisserie Chicken, pull the meat from the chicken (leaving yourself enough for one serving for another time in the week), then rough chop meat into small pieces.
Mix vegetables and chicken with your hands in a medium bowl, squeeze 1 lemon worth of juice into mixture
Season with salt and pepper to taste
Add ¾ C of raisins to the mixture
Add mayonnaise to bind mixture (the amount of mayonnaise that you use will be a bit of a personal preference)
I would serve this with a mixed spring salad, but enjoy however you would like.
