Tuna Melt and Tomato Soup
Often times I make soup because it is comforting, but there are a few meals / soups that are instant reminders of my childhood and this is one of them… Tuna Melt with Campbell’s Tomato Soup. With that in mind I have taken advantage of the last few cold days this week to make this meal and then give you some other interesting options and ways to expand on something that I love.
In a small pot add one can of Campbell’s condensed tomato soup, I dilute with milk and not water, then continue to heat on simmer or low
You need two pieces of bread, I like sourdough or grainy bread, but whatever you like, use it
1 can of albacore tuna packed in water and drained, mix with a large scoop of mayonnaise, a few capers if you have them, and salt and pepper to taste.
Heat a small pan to medium heat, I use my cast iron comel to get a really great crispiness on the bread, but an omelet pan if you have one is great for this too.
Build your sandwich with tuna and sliced cheese (I usually use swiss, but any softer white cheese works because they tend to melt well)
Add a piece of butter to the pan and then add sandwich, allow to cook until golden brown on both sides (4-5 minutes per side), you may need to add a bit more butter when you flip the sandwich.
Make sure the cheese is melted and serve with the tomato soup.
