Squash Tomato Sausage Pasta
Chop 1 yellow squash, 1 zuchinni, 3-4 mushrooms, ½ onion, 2 garlic cloves, parsley
Cut 2 sausage links into ½” pieces
Medium size sauce pan under medium heat, allow to warm
Large pot for boiling water for pasta, add 1 large pinch of salt to the water
Add sausage (if you are using chicken sausage it may be advisable to at a few tablespoons of olive oil); allow the sausage to cook for a 2-4 minutes or until it begins to brown.
Add chopped vegetables
Add dried spices, I would use garlic and herb mix, crushed red pepper, salt and pepper (adding spice at this time allows the heat and oil to open the spices flavor)
Allow the vegetable to cook until they become tender 4-6 minutes
Add 1 8oz can tomatoes including canning liquid, reduce heat to a simmer
Add pasta to boiling water ½ to ⅔ of a 1 pound bag; boil pasta until al dente 9-12 minutes
When the pasta has about 2 minutes left to cook add a handful of spinach and chopped parsley
Remove pasta when done and drain.
Serve half the pasta and half the sauce immediately, top with parmesan cheese
Store the other half for leftovers.
