Spinach Shrimp Pasta

⅓ pound peeled and deveined shrimp

¼ onion

1 clove garlic

1 large handful of spinach

3 T butter

½ can chopped tomatoes or 1 large handful cherry tomatoes cut in half

White wine

Pasta

Parmesan cheese

 

Bring water to a boil in medium to large pot; add a generous amount of salt to the water.

Place sauté pan on medium heat and add butter.

Thinly slice onion and chop garlic; add to sauté pan with salt and pepper. Sauté until tender.  Add two good pours of white wine and allow to reduce. Add tomatoes to the sauté pan and reduce. Lower temperature if mixture is reducing too quickly.

Add pasta to water. Cook according to package instructions.

Add shrimp to saute pan at 5 minutes when there is approximately 5 minutes left on the pasta. Add spinach to sauté pan reduction. Cook only until spinach is wilted.

Drain pasta.

Serve sauté mixture on top of pasta. Top with Parmesan Cheese.
