Smoked Salmon Nicose Salad
1-2 large handful of salad greens and small amount of spinach
Handful of cherry tomatoes
Small handful of green beans
3 ozs. smoked salmon, traditionally served with tuna
1 hard boiled egg.
ΒΌ C black olives
1-2 small red potatos
Add egg to a small pot of cold water and bring to a boil. Boil for 4-5 minutes then remove from water and rinse with cold water. Set aside.
Cut potato in half and add to water in the pot; Simmer for 10-12 minutes until fork tender; Add green beans with the potato and cook beans until al dente for 2-3 minutes; Drain potato and green beans and rinse with cold water.
Peel egg and cut into quarters; chop potato into bite size pieces; cut beans in half.
Place 1 T balsamic vinaigrette or Italian dressing in a small bowl with tomatoes, olives, beans and potatoes and smoked salmon and toss together.
On a plate, place salad greens on the bottom. Place tossed tomatoes, olives, beans and potatoes and smoked salmon on top of the greens. Set eggs around the corners. Salt and pepper to taste. Add additional dressing if desired.
