Seared Pork Loin with Roasted Vegetables and Rice

Remove 1 Pork Tenderloin from refrigerator

Begin 1C Rice to standard recipe

Pre-Heat oven to 425°

Chop 1 Yellow Squash and 1 Zucchini into 1” thick slices

In a large bowl toss squash and zucchini with 2T oil, 1 handful chopped Parsley, Salt and Pepper

Place on ½ of a sheet pan lined with aluminum foil

Place vegetables in the oven  for 15 minutes or until pork is ready

Pre-heat sauté pan to medium high heat, when hot add 1T oil to pan

Season Pork Tenderloin liberally with Salt and Pepper and sear on all four sides in pan (approximately 2-3 minutes per side) until brown

Turn oven to 350° and place pork on the same sheet tray as the vegetables, allow both to bake for another 10-15 minutes (if the thickest part of the pork is still pink when you slice it that is OK, the thinner end will be well done)

Remove from oven and allow pork to rest up to 10 minutes

There should be left over vegetables, rice, and pork depending on the how much you bought.
