Salmon Burger and Spring Salad

A nice alternative to classic hamburger, this dinner is a favorite of mine.  I often find my burgers at the Whole Foods Fish Department.

Salmon Burger

In a small take a spoonful of mayonnaise, squeeze of lemon, and a dash of either cayenne or Tabasco

Mix together and set aside.

Heat small sauté pan to medium heat and add 1 T oil

Place 1 salmon burger in the pan when it is hot and sear burger, then flip and allow to cook approximately 4-5 minutes per side (this will also depend on the size of the burger you have)

Serve burger on bun with spinach, tomato, and spicy mayo

Spring Salad

In a small mixing bowl add 1 handful of spinach, few sprigs of cilantro (it is best to pick the leaves from a handful of stems instead of chopping),  and thin slices of red onion.

Segment 1 orange and add to salad

Season with salt and pepper and dress with vinaigrette of choice

Top with a sprinkling of parmesan cheese.

Serve immediately.
