Salmon Burger with Roasted Tomato Relish

1 salmon / fish burger from your grocery or seafood provider.

1 Roma Tomato

1 clove garlic

1 thick slice from a large onion

Fresh basil

1 ciabatta roll

Lettuce

Mayo /Mustard

Salt and Pepper to taste

 

Preheat oven to 425 degrees

On a tray lined with aluminum foil place tomato cut in half, 1 clove of garlic, and slice of onion.  Drizzle with olive oil and season with salt and pepper.

Place on tray and roast in the oven for 15-20 minutes, or until nice and brown.

Remove and allow to cool to room temperature

Heat a grill / cast iron pan / grill pan to medium high heat and brush with a bit of oil or non-stick spray.

Place burger on the pan / grill and cook for about 6 minutes per side

Feel free to use a traditional beef burger in this recipe if you prefer

While the burger is cooking take the roasted vegetables and rough chop all three together adding a bit of fresh basil at the end

Serve the burger on a bun with the tomato relish, a piece of lettuce, squeeze of lemon and mayonnaise or mustard to taste.

 

I would eat this with a salad or a few over roasted potatoes.
