Roasted Chicken Caesar Salad

I am a fan of rotisserie chicken, I think it is a great, tasty, and easy way to create meals over the course of a week.  One of my favorite ways to incorporate chicken is to use it with Caesar Salad.

 

1 C Shredded Rotisserie Chicken

1/2 – 3/4 of romaine heart, cut into 1 inch pieces

1/4 C Shredded parmesan

1/2 C Croutons, feel free to use store bought or make your own if you have a piece of bread going stale

Mix in a bowl with store bought Caesar dressing, I really like Newman’s Own, but use what ever you might favor.

Season with 1 wedge fresh lemon juice, salt and a good amount of black pepper.

 

This isn’t something I would make for leftovers, but if you are wanting to have the salad twice feel free to cut the lettuce a head of time and save in a ziplock bag with a moist paper towel.  Also pre-shred the chicken and save it in it’s own baggie.
