Pork Scaloppini
Place on large pot of water and salt on stove and allow to come to a boil (this will be for pasta to serve alongside pork)
Take the piece of pork tenderloin that you bought and slice into 4 disks
Layout a large piece of plastic wrap and place pork down with room between the pieces, lay a second piece of plastic wrap over the top. Using a bottom of a sauce pan tenderize the pork until it is about ¼” thick. (You may want to flatten the pork 2 pieces at a time)
In a small bowl place 1 C flour, salt, pepper, and herb mix, mix together with a fork
Place a medium size sauté pan on the stove and warm to medium high heat, add 3 T butter to pan
Dredge pork through the flour, shaking off any excess
Add pasta to water, it should take 10-13 minutes to cook
Place in sauté pan and allow to cook until it begins to brown, 3-4 minutes on each side.
Remove the pork and make a quick sauce in the sauté pan with the remaining butter (if there does not seem to be enough add another 1-2 T of butter), 1-2 lemons juiced, and 1 C white wine. Stir and allow to reduce, add a handful of chopped parsley at the end.
Serve pork over pasta with pan sauce and a bit of parmesan cheese.
If you want something lighter, the pork could be served alongside a salad instead of the pasta, or my recommendation would be to just make a simple garden salad as a side dish.
