Pasta Salad
2 servings of pasta per box instructions
1 C course chopped broccoli
Handful of baby carrots
Handful of green beans
Handful of cherry tomatoes
1-2 green onion (green and white portion)
⅓ of each bell pepper (red, green and yellow)
Roasted garlic
Parsley
1 can of tuna
Salt and pepper
Dressing of your choice
*feel free to substitute any of the vegetables included in the ingredient list for items you already have
Boil pasta in a large pot of salted water per package directions. 3 minutes before pasta is completed cooking add broccoli, baby carrots and green beans to pasta and blanch. Drain the pasta and vegetables and run cold water through the mixture too cool. Place pasta and blanched vegetables into a large bowl and add remaining ingredients. Add salt and pepper and salad dressing and mix. Chill for 1 hour before servings.
