Mixed Mushroom Fettuccine

Place a large pot of salted water on the stove to boil

1 1/2 cups of mixed mushrooms crimini, shitake, button, or whatever type looks good to you in at the grocery store remove stems and chop.  Dice 1 shallot or 1/4 of an onion. Chop 1 strip of bacon into small pieces

Heat a medium saute pan to low-medium heat, add bacon and allow the fat to render out.  Then add mushrooms and shallot or onion to the pan with an additional 1 Tablespoon of butter and 2-3 stems of fresh thyme and increase heat to a medium temperature.

Add one  serving of fettuccine to boiling water and cook to package directions.

Saute mushrooms until tender.

Drain pasta and then add to saute pan to allow flavors to fully mix.

Serve with fresh parsley and a bit of parmesan.
