Grilled Shrimp Salad

1 serving peeled and deveined shrimp (little less than a ½ pound)

2 large handfuls baby spinach

Cherry tomatoes

½ an orange, segemented

¼ C of cheese your choice (goat, feta, parmesan, blue, etc)

½ C Dressing for marinade

Oil

Salt and Pepper

Wooden or metal skewers

 

Peel and devein your shrimp if you did not buy them that way

Skewer all the shrimp together, this makes it easier because you only have to handle one thing, instead of lots of small individual pieces.

Season shrimp with salt and pepper on both sides, then marinate in dressing

Heat cast iron grill pan / grill to a medium high heat and brush with a bit of oil

Make your salad with spinach, tomatoes, orange segments, and cheese

Remove shrimp from marinade and place on pan/ grill

Cook for about 2 minutes per side, just until they are opaque and pink

Immediately serve on top of salad, with your choice of dressing.

 

I would eat this dinner as with a  nice piece of crusty bread.  This a perfect salad in the spring to remind you that summer is on the way.
