Grilled Chicken with Mashed Sweet Potato
Marinate 1lb (approximately 2) chicken breast with vinaigrette dressing you have ( I often use balsamic vinaigrette)
Turn oven to 350°
Wash sweet potato and poke with fork 6-8 times all around, then microwave for 8 minutes on high
When potato is done put in oven for 20-25 minutes (potato should be soft to the touch)
Heat grilling unit (grill press / George Forman Grill, cast iron grill pan, or grill) at appropriate time
When the potato when the potato is finished in the oven begin to grill chicken
In a small mixing bowl scrape the meat of the potato, 1 pat of butter, splash of half and half, cinnamon, cayenne, salt, and pepper
Serve with grilled chicken and set aside the second chicken breast for leftovers.
I would also make a simple salad of lettuce, roma tomato, small slice of onion, and parmesan cheese.
