Grilled Chicken with Pesto Goat Cheese Potatoes

Marinate approximately ⅔ of the chicken (should be approximately 12-14 oz) that you bought with vinaigrette dressing you have ( I often use balsamic vinaigrette)

Heat grilling unit (grill press / George Forman Grill, cast iron grill pan, or grill) at appropriate time

Grill chicken until done, this will depend on thickness of chicken and cooking unit, but should take 10-12 minutes

Finish and serve ½ of the grilled chicken, reserve ½ of the grilled chicken for later in the week.

Potatoes

Pre-heat oven to 350°

Cut 5-6 small new potatoes in half

Toss in 2 T Olive Oil and season liberally with Salt and Pepper and (Other herbs or spices you prefer)

Place potatoes on a foil lined sheet pan and place in the oven, cook for approximately 20-25 minutes

Remove potatoes and then coat with 1 large spoonful of pesto, add a few small pieces of goat cheese, mix and serve
