Greek Salad
This is a go to me when gets so hot in the summer and I can’t even think about turning on the oven. On top of being cool and refreshing I try my best to take advantage of tomato season.
1/2 Hot House Cucumber or 1/2 Seeded Cucumber
2-3 seeded Roma tomatoes or if tomatoes are not yet in season use cherry tomatoes
1/4 Red Onion
2-3 oz Feta Cheese
1-2 T Italian / Oil and Vinegar dressing
1/4 C Whole Kalamata Olives
Italian Parsley
Salt and Pepper
Chop or cube first 4 ingredients into small bite size pieces. Rough chop 1 large pinch of parsley
Mix all the ingredients together in a bowl
Season with salt and pepper to taste
This recipe is best if you allow the salad to sit for a while, an hour will do great, this will let the flavors develop.
