Goat Cheese Potato Salad

A recipe I thought up for a Fourth of July party when I wanted something a bit different than the traditional mayo potato salad.  It’s been a hit with my family and friends ever since! Try it with grilled salmon and burgers.

 

½ small log of plain goat cheese

½ red and ½ yellow bell pepper

2 stalks green onion

Parsley

1 small bag of small red potatoes

1 clove roasted garlic

Salt and pepper

Splash of half and half

 

Set out goat cheese to soften.  Pre-heat oven to 375 degrees.

Chop bell pepper, green onions and parsley. Set aside.

Cut red potatoes in half.  Toss in olive oil.  Season with salt and pepper and place on a baking sheet.  Baked in oven @ 375° for around 20-30 minutes until fork tender.  Add garlic, coated in oil, to the baking sheet with 10 minutes cooking time remaining.

Take potatoes and garlic out of oven.  Smash the garlic in the bowl then add potatoes and blend with goat cheese until smooth.  Add half and half to thin the goat cheese as needed.  Add the chopped vegetables and salt and pepper to taste. Mix together.
