Egg Sandwich

I think eggs should be a consideration for every meal, not just breakfast. One thing I find quick and easy is a savory egg sandwich at night. Make it work for you.  This is what I like.

 

2 eggs over easy or scrambled

Bitter greens (arugula, frisee, etc.) or mixed greens

Crunchy wheat bread (something that toasts well)

Swiss cheese

Sliced tomato

Mustard (yellow or stone)

Add slice turkey, ham or other meat if you like it

 

Use a small saute pan to cook the eggs to your preference, I am over-easy.  Layer the sandwich with the above ingredients or the ingredients of your choice.

Serve it with roasted potatoes.

 

ROASTED POTATOES

2-3 red potatoes cut into bite size pieces; toss with oil olive, herbs (rosemary, thyme, oregano), salt and pepper and flavor (balsamic, garlic, etc.).

Baked at 375-400° for 20 minutes or until fork tender.
