Chicken with Curry Sauce

8 oz Chicken Breast

2 T oil

1/2 sweet onion

1 red bell pepper

Fresh cilantro

1/2 fresh lime

Store bought curry sauce

Basmati Rice or any other mild rice

 

I am not very proficient in Indian and Asian cooking, I can get by, but when I really have a craving for it I look for resources that can help enhance the skills I have.  One of my favorite of these is a company called Tasty Bite, they make an array of sauces and sides, that I think are great. I find them at the grocery near me in small vacuumed packed pouches and as a bonus they are relatively inexpensive.

Here is how I often use the Tasty Bite Simmer Sauces

Slice chicken into strips.  Chop onion and red bell pepper into thin strips. Lastly for prep chop 1 large pinch of cilantro.

In a medium skillet heat 2 T of vegetable oil to medium heat and add the onions and bell peppers, let those cook for 4-5 minutes and get some brown coloring.  Then add sliced chicken and allow the chicken to brown before adding the simmer sauce. After adding sauce let everything cook for about 10 minutes, this will let the sauce reduce and develop more flavor.

This will create enough food for 2 meals, so cook 2 servings of rice to go along with your entree.  Or feel free to use the portioned 90-second microwave rice and make that when you are ready.
