Chicken Cacciatore
Heat Sauce Pan to Medium – High heat, add 4 T oil when pan is warm
Sear 1 ¼ lb bone in chicken breast, skin side down (you are looking for a golden brown color on the skin, should take a 3-4 minutes, it is best not to move the chicken for the first few minutes)
Flip the chicken and brown on the boned side for 3-4 minutes
Remove chicken, and in the same pan add chopped ½ chopped onion, ½ bell pepper, 1 small zucchini, and 2-3 cloves garlic
Allow vegetables to cook until tender 6-8 minutes at a medium heat
Add 1 C red wine, and allow to reduce by half.
Add 1 small can chopped tomatoes and ½ C chicken broth
Once the broth has come to a simmer return chicken to pan
Add 1T capers
Cook at simmer for 20-25 minutes
Add handful of chopped parsley at the end for flavor and color.
