Baked Roma Tomatoes
2-3 Roma tomatoes
1-2 cloves of chopped garlic
2-3 T olive oil
Fresh thyme
Salt and Pepper
Pre-heat oven to 375 degrees and line a baking sheet with aluminum foil.
Cut tomatoes in half length wise. In a large mixing bowl carefully mix tomatoes with garlic, olive oil, pinch of fresh thyme, salt and pepper. Place tomatoes on baking sheet with the skin side down. Bake for about 20 minutes until they have a nice brown color on the top and skins.
Serve as a side dish immediately and then any remaining tomatoes can be saved for later use on sandwiches, salads, or with another meal.
