Baked Polenta with Sausage and Vegetables
Rough chop ½ yellow onion, 2 cloves garlic, 1 zucchini
Slice 1-2 sausage links into small disks
Pre-heat oven to 350°
Place medium sauté pan on stove top and warm to medium-high heat with 2 T oil
Add sausage to sauté pan and allow to brown
Then add chopped vegetables and 2 large handfuls of baby spinach to pan
In a small pot bring 1 C stock or water to a boil
Remove the pot from the heat and pour ⅓ C polenta and stir well, and then add in sausage and sautéed vegetables.
Season to taste with salt and pepper
Pour mixture into baking dish that has been buttered, oiled, or sprayed with a non-stick spray
Place in oven to bake for approximately 20 minutes
Pull polenta from the oven top with a handful of parmesan cheese and allow to bake for another 5 minutes
