Asian Chicken Salad

This is a quick dinner to put together when you have just returned home from the grocery store with a Rotisserie Chicken and you have the rest of the week’s groceries put away.

 

1 C rotisserie chicken shredded (easiest to shred when the chicken is still warm)

Handful of cashews or almonds toasted

½ of an orange in segments (section entire orange use ½ in this recipe and save the other half for breakfast with yogurt)

1-2 green onion – green and white parts

Handful of spinach

½ red bell pepper (thinly sliced)

½ C red cabbage

Asian Dressing (store bought) or make your own recipe. See below

 

Mix all ingredients together and enjoy

 

ASIAN DRESSING

 

1 T sesame oil

¼ C vegetable oil

1-2 T white vinegar

1 whole lime squeezed

Salt and pepper to taste

Pinch of sugar

Pinch of chili flakes (red crushed)

1 clove of minced garlic

 

Blend or whisk all ingredients together except the oil.  When all ingredients are mixed, slowly incorporate the oil.
